  • Preheat the oven to 375 degrees.

  • Mix together the dry ingredients of the cake mix with eggs, and oil in a large mixing bowl (no eclectic mixer needed). Roll the dough into balls the size of walnuts. Place 2 inches apart on ungreasedcookie sheets.

  • Bake in the preheated oven until the tops start to crack, about 8 minutes. Cool in the pans for 10-12 minutes before removing to cool completely on a wire rack.

  • In a large bowl combine cream cheese, butter, milk, and vanilla. Add the powdered sugar 1 cup at a time, mixing well with each addition. If the consistency is too stiff, add more milk.

    I made these last week and they were sooo yummy! The two comments I'd make: (1) the filling didn't turn out as thick as I thought it would. It wasn't actually runny, but it was somewhat runny and I had to put the whoopee pies in the fridge after I sandwiched them so the filling wouldn't ooze out the sides. I'm in Texas, so the humidity may have had something to do with that, I don't know. (2) The next time I make these, I think I'll cut the filling recipe by 1/3 or so because I had a ton left over.

    But yes, these were so good and were a big hit!!

    Have made these on several occasions they are just wonderful. My problem is once they come out of the oven they fall flat, how do I get them not to fall flat?

    Hi Shirley,This recipe is very similar to our Homemade Oreo Cookies. They both use a cake mix. With the oreos, you add 2 eggs and 3/4 cups shortening to the cake mix. Where the red velvet cookies call for 1/2 cup veg oil. I'm sorry they are going flat. Do they looker thinner than our cookies in the picture? Only mix until combined. Try no extra mixing. I'm just trying to pull out all of the tricks I know for flat cookies. :)

    I loved these! They’re very easy and fun to make. One thing I would say is that the cream cheese frosting doesn’t need 3 cups of sugar. I added 1.5 cups of sugar so it wouldn’t overpower the cream cheese and it was delicious. Overall great recipe and I would try again😋
