Pinkie Strawberry Brownies are a fun spin on traditional brownies. Made with a boxed strawberry cake mix and a crispy white icing, they will delight the senses.
A Shortcut to Delicious!
Pinkie Brownies. Seems odd right? You will just have to trust me that these are divine! I love scratch made cooking. I also love to use a short cut or two as well. I work full time, have a new grand baby and do The Buttered Home. Sometimes, it just isn't feasible for me to always do scratch made. I love making these HOMEMADE BROWNIES from scratch but to change things up a little, we use a cake mix for these.
How to Make Them
Pinkies are so sweet and delicious. On top of that, they are the ultimate cheater recipe. I am a huge proponent of scratch made cooking but Lawd y’all, I just don’t think these could be any better. Using a prepackaged strawberry cake mix makes these extra easy and delicious. You can also add pureed fresh strawberries for added flavor and flecks of dark pink. I like to put the puree in the cake mix, it makes them even prettier. So here is what you will need.
Ingredients
- 1 box strawberry cake mix
- 2 large eggs
- ⅓ cup vegetable or canola oil
- pinch of salt
For the Glaze:
- 1 cup confectioners sugar
- 2-4 tablespoon milk
Method
- Mix the cake mix, eggs and oil and salt in a large bowl. Mix well and make sure to get all the clumps out without over mixing.
- Spread mixture into a parchment or wax paper lined 8 x 11 or 9x9 baking pan. Using the parchment makes for easy removal from the pan after its cooled.
- Bake at 350 degrees for 15-20 minutes until a toothpick comes out clean.
- While the Pinkies are cooking, Mix confectioners sugar and milk, one tablespoon at a time until glaze is smooth and sort of thick.
- While the Pinkies are still hot, spread the glaze evenly on top and allow Pinkies to cool and the glaze to harden. Remove by parchment from pan and cut into squares.

Tips and Tricks
Can I use another flavor cake mix?
Yes! Just like all of our other recipes, this one is just to get your creative juices flowing. We like to see you take our ideas and use them as a catalyst to get started! Personally, I think a Banana nut bread mix would be amazing!
Why don't you add vanilla to the glaze?
Vanilla can sometimes be overpowering. The purpose of the glaze here is not to be the star of the show. It is only meant to add texture and a touch of sweetness to the already delicious strawberry brownie.
My brownies were gooey and under cooked, why?
Sometimes, when I make them in a smaller pan, I need to increase the cook time. We like them gooey but when I want them more cake like, I increase the cook time in 5 minute increments until a cake tester or knife, comes out clean.

I do not like traditional chocolate brownies, so this sounds wonderful. I will try it and make it sugar free with sugar free cake mix and no sugar added strawberries. I’ll also use powdered sugar replacement for icing! Sounds amazing!

Followed recipe per instructions. Used strawberry milk instead of whole milk to "up" the flavor.. After they cooled I used a heart shaped cutter and sprinkled with red sugar flakes. An absolutely wonderful presentation. Enjoyed them at a Valentines/Birthday party. Glad to have found this recipe.Reply
